How do you make carbonite just the quest version and not the full version in World of Warcraft?

I want to still have carbonite but I hate the map and I want to have Cartographer 3.0. How do you make it so you still have carbonite just not the full version so I can have Cartographer 3.0 also in World of Warcraft?
